Healthy Thai Chicken Burgers


While you're all running it's important to look after your nutrition... so we thought we'd give you a quick, easy and healthy meal recipe (I know right, first there was the video on glute activation, now this... WHAT'S NEXT!!?)



1kg chicken mince 2-4tbs Thai red curry paste (depending on spice level) 4 shallots, finely chopped 2tbs sweet chilli sauce 2 eggs 1/2 cup cottage cheese 1 cups breadcrumbs or almond meal 4tbs fish sauce 2tbs soy sauce 1 cup fresh coriander, roughly chopped


1. Combine all ingredients in a large bowl. Mix well. 2. Using 1/2 cup mixture, shape into 10-12 x 3cm-thick patties. Place onto a tray.

Cover. Refrigerate for 30 minutes. 3. Heat barbecue or fry pan on low-medium heat. Spray patties with oil. Cook for 12 minutes, turning, or until cooked through.

Serve on a wholegrain bun with grated carrot, baby spinach leaves, cucumber, sliced beetroot and tomato.
